Add a handful of crumbled feta cheese,

salt and pepper.

                                           

Lovely with warm crusty bread and olive oil.

For the dressing

2 tbls of olive oil

handful of chopped parsley,  1 tsp Dijon mustard, squeeze of lemon juice

 

 

 

 

 

 

 

 

 

Christmas Red Cabbage

 

1 Med – Large red cabbage, 1lb of onions, 1lb of apples, peeleed, cored and sliced. 2 cloves of garlic, salt and pepper, 2 tablespoos or carraway seeds, 3 tbls of brown sugar, 3 table spoons of white wine or red wine vinegar, 2 tbls of butter, drop of port  

( optional).

 

 

Preheat oven to 150’C-130’C fan. Prepare cabbage, take away tough outer layers. In a large dish start making layers of Cabbage,onion,apple, seasoning.

 

Sprinkle garlic,seeds and brown sugar in between. When all layers done, pour vinegar, port and butter on, cover and cook for around 2 hours.

 

Warm Winter vegetable salad

 

To serve 2.

 

Take 2 cloves of garlic, 1 red onion, 1 celeriac,2 carrots, 2 beetroot,      handful of chopped walnuts, a handful of feta cheese, 2 table spoons of olive oil, balsamic vinegar, 1 tea spoon of Dijon Mustard, chopped parsley,  squeeze of lemon juice.

 

Preheat oven to 180'C .

 

Peel and chop vegetables into wedges. Cook for about 30 minutes. Place walnuts on tray and toast                                                 

Place vegetables into a dish and sprinkle the feta cheese on top.

 

To make the dressing

 

Take 2 table spoons of olive oil, mixing in balsamic vinegar, mustard, parsley and a squeeze of lemon.

 

Drizzle over vegetables and sprinkle walnuts on top.
